What You'll Do
With this hands-on Italian cooking class you will learn the secrets of authentic homemade pasta and Neapolitan pizza directly from Chef Giuseppe, a traditional cuisine expert. He will meet you at Metro Laurentina (exit to the right) and take you to his professional kitchen located in the quiet Roman countryside, far from the city chaos. Here begins an authentic culinary journey where you will get your hands in the dough - literally - and learn techniques passed down through generations.
Chef Giuseppe will guide you step by step in preparing 3 different types of fresh pasta dough, explaining the correct proportions of flour, eggs, and water for each type. You will then try out various traditional Italian shapes: you will learn to hand-roll and cut fettuccine and tagliatelle, to form orecchiette in the Apulian style, and to create farfalle, discovering the tricks to make them perfect just like an Italian grandmother.
You will cook 2 complete pasta dishes with authentic sauces such as fresh tomato, cacio e pepe, carbonara, or amatriciana, learning the secrets of perfect emulsification. You will then make your own personal Neapolitan pizza with dough you have made yourself, hand-stretch it, and top it with fresh ingredients before baking it in the professional wood-fired oven. Everything concludes with a convivial tasting of all prepared dishes, accompanied by Italian wine, in the quiet garden of the cooking school.

Meet Chef Giuseppe at the Laurentina Metro station and exit to the right, at the agreed time. He will warmly welcome you and take you to his cooking school located in the quiet Roman countryside, away from city traffic. During the short journey he will introduce the day's program and what you will learn. Once you arrive, you will put on your apron and the culinary adventure begins!
Chef Giuseppe will teach you to prepare 3 different types of fresh pasta dough, explaining the differences between traditional recipes. You will learn the correct proportions of soft wheat flour (00), fresh eggs, and water for each type. The chef will show you how to knead by hand forming the classic well shape, how to work the dough to the perfect consistency (smooth and elastic), and how to let it rest. You will discover the secrets passed down by Italian grandmothers and the tricks to always get perfect pasta.
Once the dough is ready, the most creative and fun part begins: shaping the pasta! Chef Giuseppe will teach you various techniques to create traditional Italian shapes. You will learn to roll and cut fettuccine and tagliatelle with a knife, to form Apulian orecchiette by pressing with your thumb, to create farfalle by pinching in the center, and other regional shapes. You will work with your hands just like Italian grandmothers did, discovering that each shape has its own specific technique and ideal sauce pairing.
Chef Giuseppe will guide you in preparing 2 complete pasta dishes with traditional Roman sauces. You may cook recipes such as pasta with fresh tomato and basil, cacio e pepe (the most challenging!), authentic carbonara, or amatriciana. You will learn the secrets of perfect emulsification, how to create a creamy sauce without cream, the right timing for combining pasta and sauce, and how to achieve the ideal consistency. The chef will reveal tips from Michelin-starred restaurants to always serve restaurant-quality pasta.
Now it is time for the Neapolitan pizza! Chef Giuseppe will teach you the secrets of the DOC Neapolitan dough using only 4 ingredients: flour, water, salt, and yeast. You will learn the hand-stretching technique - strictly no rolling pin - how to create a tall and fluffy crust, how to top it with San Marzano tomatoes, buffalo mozzarella, and fresh basil in the right proportions. You will then bake your personal pizza in the professional wood-fired oven at 485°C for 60-90 seconds, watching the magic of rapid baking that creates the perfect pizza: crispy outside, soft inside.
The best moment has arrived: enjoying the fruits of your labor! Sit in the quiet garden of the cooking school, surrounded by the nature of the Roman countryside, and taste all the dishes you prepared: the fresh pasta with its various shapes and sauces, the freshly baked Neapolitan pizza, all accompanied by a carefully selected Italian wine. At the time of booking, please communicate any allergies, food intolerances, or dietary preferences so Chef Giuseppe can adapt the recipes and purchase the appropriate ingredients. Arrive punctually at Metro Laurentina with your confirmation voucher and comfortable clothing. The class is suitable for all levels, from complete beginners to cooking enthusiasts, from age 2 (children must be accompanied by an adult).
Cancellation Policy
Cancellation with 1 day notice:A full refund is available if you cancel at least 1 day (24 hours) before the class start time. This allows Chef Giuseppe to reorganize and purchase ingredients for the correct number of participants.
Cancellation under 24 hours:Cancellations made with less than 24 hours notice are non-refundable. Chef Giuseppe will have already purchased all fresh ingredients and prepared the kitchen for the confirmed number of participants.
Late arrival:The class starts promptly at the scheduled time at Metro Laurentina. Latecomers may miss the pick-up. No refund is provided for participant delays. Please arrive at least 10 minutes before the meeting time.
Bad weather:The class takes place indoors in the professional kitchen, so it runs in any weather. Only the garden tasting may be moved indoors in case of rain.

- Wash your hands thoroughly before starting and whenever necessary during preparation.
